I know you're probably thinking "another pumpkin recipe?" and you'd be correct, I'm a tad bit obsessed with the stuff. I can't help myself; it's the only time of year I can indulge in my very favorite flavor with everything from pancakes to pasta so I have to take full advantage. Zach and Bear don't love pumpkin flavored things (they're crazy, I know) but they do love cookies, so we can compromise with this yummy, easy recipe.
I can sell Zach on pretty much anything with chocolate chips in it, so he was instantly a fan. Bear is a little harder to win over, but I'm fairly certain we had him at "cookie". We polished off this batch in just under a day, which has to be some kind of record for three people. Granted the cookies are small, but they're dense and packed with chewy, chocolatey flavor. We love them warm, right out of the oven with a big glass of milk. Heaven.
One batch of this recipe makes several dozen cookies, so it's perfect for holiday gifting. Wouldn't that be a pleasant surprise? Not very practical but still, delicious.
1 cup semi sweet chocolate chips
1 cup white chocolate chips
1 1/2 cups oatmeal
2 cups flour
1/2 cup firmly packed brown sugar
1/2 cup sugar
1 cup butter, room temperature
1 cup pecans
1 teaspoon pumpkin pie spice
orange food coloring
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla
pinch of salt
Preheat oven to 350 degrees.
In a large mixing bowl, cream together butter and the sugars until light and fluffy.
Blend in egg and vanilla extract.
In a separate bowl, stir together flour, baking soda, baking powder, pumpkin pie spice, salt, pecans, oatmeal, and chocolate chips.
Mix flour mixture into the butter-sugar mixture. Add orange food coloring until desired color is achieved.
Drop spoonfuls 3 inches apart on ungreased cookie sheets.
Bake cookies for 10-12 minutes.
We made the 7+ hour drive home yesterday to visit our families for the week and Bear is in heaven. He loves playing with his cousins and getting to see his cows on the farm- it's all he's talked about for weeks. And now that he's here, he's just so thrilled that it makes my Momma heart want to explode. Zach and I are of course loving it too; I'm happy anytime I get to go on daily walks with my Mom and stay up late watching Christmas movies on my parents' couch. I'm sick currently with a double ear infection and it's funny- you never grow too old to need your Mom. It's so nice to be surrounded by family and makes me incredibly grateful for all the love and support in our lives. Bear has so many amazing role models and I hope he takes after each and every one of them.
Can you believe Christmas is five weeks from today?! I'm getting so excited! And Thanksgiving is just four days away which means I need to pull out the stretchy pants and get ready to do some major damage- I'm already craving my grandma's green jello salad.
