When someone mentions the word "funfetti", I'm all ears. Maybe it's the nineties kid in me, but I just can't get enough of the sprinkle-filled cakey goodness. The gooier, the better.
My birthday is next Friday and everyone in my family laughs that I don't just have a birthday, I have a birthmonth. I enjoy drawing out the celebration for weeks, which includes buying myself unnecessary gifts and baking desserts "just because". Because it's my birthmonth, hello. Bear is carrying on this tradition as well (Zach just shakes his head).
These funfetti cake bars are so yummy and rich, we ate the pan in less than a day. They're easy to make and the perfect treat for when you're craving something sweet & festive. Chock-full of white chocolate chips and sweetened condensed milk, you're sure to love these bars as much as we do. I almost called them Cavity Cookie Bars, which would be appropriate (though mildly unappealing).
-1 yellow cake mix
-1 stick butter, softened
-1/2 cup sweetened condensed milk
-1 cup sprinkles
-1 cup white chocolate chips
1. Preheat oven to 350 degrees. Line a 9x9” pan with foil and spray with cooking spray.
2. Put cake mix, butter, and egg in a large bowl. Mix until a thick dough forms. Add 2/3 cup sprinkles and stir until incorporated.
3. Press about 2/3 of the dough into the bottom of the prepared pan. Sprinkle with white chocolate chips and remaining 1/3 cup sprinkles. Pour sweetened condensed milk over the top. Separate remaining dough into small balls and evenly space over the top of the bars. Press down to flatten.
4. Bake bars for about 30 minutes, or until they just begin to brown. Cool completely before slicing, otherwise the mixture will be too gooey to cut.
I'm just not sure if I took enough pictures of these bars. :) It was a struggle, as chubby little paws were reaching into the shots in attempt to grab some more sprinkles. Luckily Bear doesn't have too much of a sweet tooth, unlike his Mommy, and he prefers salty to sweet. More for me.
This week has me in such a funk; I can't seem to get my days straight. With Monday being a holiday and Zach taking off work Tuesday, it seems impossible that tomorrow kicks off the weekend. No complaining here, just trying to wrap my head around the good news. My sweet cousin and her best friend are coming to visit and we are so excited! We have lots of fun things planned and Bear is ready to have some playmates.
