copycat Starbucks egg bites recipe

As promised, I’m back with another recipe this week. It’s super simple and so tasty; if you’ve had the Bacon Egg Bites from Starbucks then you know what I’m talking about. The only thing I’ll say about the homemade version is they’re not quite as “creamy”; they have more of an egg taste to them than the Starbucks version but are still delicious. These eggs bites make an easy breakfast or snack and have become one of the boys’ favorites. This is a fool proof recipe (obviously, if I’m sharing it) and I hope you love it as much as we do!

I’ll share an image with the recipe you can save at the end of the post, as well. Chances are you already have everything you need on hand.

You’ll need:
-dozen eggs
-1 cup bacon, chopped
-1/2 cup whipping cream
-2-3 cups mozzarella cheese

Directions:
Cook bacon, chop up and set aside. Put eggs in a bowl, add salt and pepper to taste. Pour in whipping cream & whisk together. Whisk in bacon & cheese. Spray muffin tins with cooking spray and pour mixture in, almost to the top of each cup. Bake at 350 for 20 minutes.

This is after having chopped the bacon and adding salt and pepper. Pour in whipping cream in with the eggs.

Whisk in cheese. I add a little extra because we like ours extra cheesy.

Pour in greased muffin tins, almost to the top. Bake at 350 for 20 minutes and enjoy! Egg bites can stay in the fridge 3 days and afterwards we freeze them. They reheat really well and still taste great.

Hope you’re all having a great weekend and staying safe & healthy.
