cookie butter popcorn

If you've never tasted the addicting deliciousness that is cookie butter, you are missing out on one of life's greatest pleasures. My friend Whitney introduced me to Biscoff cookie butter years ago and our pantry has been stocked with it ever since. I get it at Target, but I'm sure Walmart carries it as well. Trader Joe's also has it's own yummy version which I love, and they even have a cookie & cocoa swirl butter. Talk about calorie overload. No matter which kind you get, you're going to quickly find out what the hype is all about. And if you love salty+sweet, just get ready for the ultimate match made in heaven.

Cookie butter meets popcorn. 

This recipe is so simple to make, I thought there's no way I could mess it up. Wrong. I heated the butter too long in the microwave the first time, which ended up burning the cookie butter. Make sure you do 30 second increments when heating the mixture in the microwave, no longer. Otherwise you'll have to throw out an entire perfectly tasty cup of cookie butter. I almost cried.

This is my absolute favorite new popcorn recipe, and I've tried quite a few. I'm a kettle corn junkie and love salty sweet things, so this is right up my alley. It's pretty rich, so a handful or two does the trick. You can seal it in an airtight container for up to two weeks and munch on it all you want! Zach and Bear didn't get any of this batch (I may or may not have hid it behind the cereal boxes in the pantry). Next time I'll double the recipe and share. :)

 

Ingredients:
1/4 cup butter, cubed
1 cup cookie butter (I used Biscoff)
8 cups popped popcorn

Directions:
1. Pop your popcorn. I used two bags of already salted microwavable popcorn.
2. Place the cookie butter and cubed butter into a microwavable bowl. 
3. Microwave for 30 seconds, stir, microwave for 30 more seconds.
4. Stir to combine and pour over popcorn in a large bowl. Pour slowly and in small increments until all the popcorn is coated.

This week is so crazy busy! I'm working 20+ hours at my styling job the next three days, trying to get ready for NYFW, and working on several big projects that I can't wait to show you guys soon. I went to Sephora this afternoon while Bear was at MDO to get some new foundation and was so disappointed with my makeover; I left that place looking like a ghost from 1993. My face was so white (she used ivory foundation on me and I'm pretty tan!) with the darkest brown lipstick ever. I love my grandma dearly but that lipstick looked exactly like what she wears (and I'm not a huge fan). If you're curious just how hideous I looked, there's proof via pictures on my snapchat, brittfullwood. I only got the makeover because I knew I'd be spending more than $50 anyway, the minimum they request you spend for getting one. The experience made me appreciate Rivki even more! 

Don't you love these four day work weeks after a holiday weekend? They're our favorite over here because it's more time with Zach/Daddy. Hope yours is off to a great start!
